Bacon Wrapped, Sausage Stuffed Meatloaf

This little concoction just started out as plain ole meatloaf, but it transformed into something spectacular.  I had extra beef from when I made the Empanadas last week and decided to make meatloaf for dinner one day during the week.  Well it turned out I had extra sausage too, so that had to go in.  The last piece of the puzzle game from an inspiration.

I was stumbling along the internet when i came across this masterpiece.  Its called a PizzaBurger. I know what I made doesnt really compare to this, but its a start.  I'm taking baby steps.  Plus I would be the only one to eat the PizzaBurger because Cassie definitely wouldn't, I'm not sure she would even want to look at it.  I will have to make it when I have more people around that will want to eat this awesomeness.

But back to the meatloaf.  I posted that link on facebook and then it came up that I was making sausage stuffed meatloaf.  There were some suggestions to add bacon to the meatloaf.  So for all of you out there, I added bacon.  On to the recipe.

Ingredients:
  • Ground beef
  • Seasoning mix, I used Cruz Bay Grill Rub, but Lipton French Onion mix works well, or really any mix you want.
  • Sausage links
  • Bacon
  • Ketchup

Directions:
I'm not going to give directions this time. Instead I'm giving you a slideshow of the steps.  I cooked the meatloaf for about an hour and a half at 350.
Some changes to note:
  1. Next time I will cook the sausage and inside bacon before I add it to the meatloaf.  This way there will be an extra crisp on the inside of the meatloaf and it will cook faster.
  2. I would also wait to put the ketchup topping on just 15 minutes before it is done instead of at the beginning.  This will allow the top bacon to get crispy, and the ketchup not as sticky because it lost too much moisture.
