Buffalo Chicken Sushi

I don't remember what made me think of making buffalo chicken sushi. According to Cassie I just said out of no where "I'm going to make buffalo chicken sushi."  And I'm pretty sure that is all there is to it.  It was a stroke of genius. I didn't have a recipe for it. In fact after I bought all of the ingredients I looked for a recipe to see how other people made it, and I only found one other recipe.

At first I was going to use canned chicken I bought at the can can sale, but I was making some chicken breasts the night before so I decided to make an extra breast. I made two rolls using each of the types of chicken to see which one was best.

Step 1: Prep fillings: red onion, cucumber, carrot, and bleu cheese.

Step 2: Prep Rice.
I'm really bad at making rice for some reason.  I tend to burn it, so I cheated and used a microwave rice.  This brand has a really good sticky rice which works well for sushi. Let the rice sit for a while so it doesn't burn your fingers when try to make the sushi.

Step 3:  Put rice on the nori.

Step 4: Flip and fill.
Make sure not to over fill, so you can still close it.

Step 5: Roll sushi.
I first rolled it by hand.  After that I used the bamboo rolling mat that came with a sushi kit Cassie gave me for a holiday.  This allows you to get it nice and tight and makes it even.

Step 7: Cut.
This was actually a hard step, i used 4 different kinds of knives before i found one that didn't just break the sushi apart.  The one that worked best was ridged and really sharp.
