Baconnaise Broccoli Salad


This one goes out to Julie.  She is the one who turned me on to the great condiment Baconnaise.  Baconnaise is bacon flavored mayonnaise.  The weird thing about Baconnaise is that it doesn't actually have bacon in it.  In fact there is no meat whatsoever in it.  This means Cassie can have it.

The first time I used Baconnaise was on a sandwich I made.  I really wanted the bacon flavor so I smothered the stuff on.  The only problem is that its mayo with bacon flavored and I don't like a lot of mayo.  I like a small amount of it on certain sandwiches and in some salads, but not a lot.  So when I took the first bite of that sandwich I made I was overwhelmed by the mayo.  I was expecting a bit of bacon flavor but got a huge mayo flavor.  You live and you learn.

Cassie's mom asked me to make a side dish for easter, so I decided to take the Baconnaise for another whirl.  I went to their website and looked through their recipes and found this awesome looking dish.  This recipe uses real bacon to strengthen the bacon flavor.  But I wanted to keep this Cassie friendly, so I used turkey bacon. I also doubled the recipe because there was going to be a lot of people, but I didn't use double Baconnaise.  Instead I used 2/3 cup Baconnaise and then 2/3 cup regular mayonnaise.

Baconnaise Broccoli Salad - adapted from Baconnaise's website. This is the doubled version:


  • 16 slices turkey bacon
  • 4 heads fresh broccoli, chopped
  • 3 cups sharp Cheddar cheese, shredded
  • 1/2 large red onion, chopped
  • 1/2 cup red wine vinegar
  • 1/4 cup white sugar
  • 4 tsp ground black pepper
  • 2 tsp salt
  • 2/3 cup Baconnaise
  • 2/3 cup mayo
  • 2 tsp fresh lemon juice
Directions
  1. Crisp up the bacon in a pan.  When done let the grease drain on paper towels and then crumble.
  2. Blanch the broccoli: put broccoli is boiling water for about 30 seconds, drain and put under cold water. This gets the broccoli more tender, but not mushy.
  3. In a LARGE bowl, mix the bacon, broccoli, cheese and onion.
  4. Then mix the vinegar, sugar, pepper, salt, Baconnaise, mayo and lemon juice in another bowl and add with broccoli mixture.
  5. Put the salad in the fridge for a bit to let it get nice and cold and let the flavors come together.

I was really good. It wasn't too mayo which I liked. And there was the additional bacon flavoring from the turkey bacon. I'm sure it would have been even better if i used real bacon crumbles.

And also.... the next morning to make some scrambled eggs with it mixed in. It was very tasty.
