Ginger Lime Shrimp




I made this recipe twice within a week.  The first time was the night after Christmas.  There was extra shrimp from the shrimp cocktail that I wanted to use before it spoiled.  I had this recipe saved in my collection just waiting to be used and this was the perfect opportunity.  It was awesome.  The second time I made it was New Years Day when I had frozen shrimp. I boiled it first and then marinated it.

Ingredients:
  • 20 large shrimp, peeled and de-veined
  • 1 lime, juice and zest
  • 3 tbsp olive oil
  • 3 tbsp soy sauce
  • 3 tbsp chopped onion.. I used dried because I had it handy
  • 1 1/2 tsp grated ginger
Directions:
  1. Combine all ingredients and let marinate for 2 hours. Every once in a while, mix the shrimp around.
  2. Heat up a pan on med-high.
  3. Add shrimp.  Don't overcrowd the pan (you might have to heat the shrimp up in multiple sets)
  4. Serve with slices of lime.
